I adopted this recipe from one I found in Family Circle’s January 2009 issue. I only made a few modifications to suit our tastes and it came out wonderfully, so per usual I’m going to post the recipe to share with you all. Just a warning, this recipe as prepared has about 500 in a not terribly humongous serving. So if you are counting your calories make sure you do this one on a night when you have the room for that size meal. We served it with some slices of French Baguette – we should have served it with a salad, but we were feeling lazy and pretended not to notice. I don’t have any pictures of this one yet because it was so delicious that the entire thing got eaten before I remembered to grab my camera. But we’ll probably make it again in a month or two and if I remember I’ll grab some pictures then. Anyhow, recipe…
Makes: 4 servings | Prep Time: 10 minutes | Cook Time: 7 minutes | Microwave Time: 3 minutes at 50% power
- 8 ounces of pasta of your choice (you could save 100 calories per serving by reducing this to 4 ounces)
- 4 ounces Sharp Cheddar Cheese
- 4 ounces of Trader Joe’s Quattro Formagio shredded cheese (parmesan, provolone, asiago and fontina cheeses – I love this blend but you could try any good cheese blend)
- 1/4 teaspoon McCormick’s Mesquite Marinade seasoning packet
- 1/2 teaspoon McCormick’s Smoked Paprika
- 3/4 teaspoon McCormick’s Smoked Sweet Pepper seasoning
- 1/4 to 1/2 cup of milk
- 3 slices of bacon, crisply fried and broken into pieces
- Cook macaroni in a large pot of slightly salted water according to package directions. Drain and place pasta into square baking dish.
- Mix in the shredded cheeses, mesquite flavoring, paprika and sweet pepper seasoning blend. Stir until cheese melts, adding milk for desired creaminess.
- Sprinkle bacon on top. Cover and vent the corners of the baking dish. Microwave for 3 minutes at 50% power. Serve warm.
The result is a cheesy, sweet BBQ style macaroni and cheese that smells fabulous and couldn’t be easier to make. We’re planning to use the rest of our mesquite marinade packet to make hamburgers on Wednesday and MM and I finished the leftover macaroni and cheese for lunch today. Next time I will plan to make a big salad to serve alongside this and probably reduce the pasta in the dish by half, saving us each 100 calories.
Before you start whining about how I can’t diet because I’m pregnant and to go eat a box of donuts and be happy, hear me out. I hear you. I am not planning to do anything stupid. In fact, you won’t see much change on my end anytime soon. I’ll probably be that weird participant who updates to say, “I gained 2 pounds! Hurray!” But my GOAL is that when BB Kumquat etc. is born this July, that I’ll be able to tell you that I gained the preferred 15 pounds or so that any doctor would advise. And THEN after baby is born, and I’m all nursing like a champ and turning into Super Mom of Two, I’ll be telling you how fit and fabulous I feel and that I’m working out daily and the weight is coming off and I am so happy….
That’s my goal. That’s what I want. So for now, that means eating my recommended calorie intake, trying to do a decent 15 minute workout every day (at least) and keeping up with my body in this pregnancy. It does not mean gaining 70 pounds even though the baby will only weigh about 8 pounds when it’s born. Like I did last time. I have developed some really good habits since starting and finishing the Looking Fine by 2009 challenge @ Daily Mish Mash and creating a program with the help of my wonderful husband that WORKS so my goal here is to not F that up. I want to be able to look at some pictures of myself (even full body pictures!) without cringing or deleting it immediately. I’m tired of only being in 1/116 of the pictures of my life. I’m tired of the lack of energy. I’m tired of being tired.
I’m already doing a good job. It NEEDS to stay that way. I weight 207 pounds right now and I’m considering that a nice progress from what I weighed six months ago. That’s sick. I’m 5’2″ inches people – that’s truly, utterly sick and it needs to change. After the baby. And come what may, when this baby is born, at some point AFTER that, I will be kissing my big fat blog ass good bye. For good. So thank you TenaKim for starting this up and reminding me to hold myself accountable. And someone remind me to workout today.
This week’s theme for the I Heart Faces photo contest is “Silly” and the judge is Heidi Lynn a mom and photographer. Check out her photography site and her blog, Minnesota Mom. The picture I chose for this week was taken the day of MM’s first hair cut, well first completed hair cut anyway. I love his sweet silly expression and I’m so glad we were able to capture it – because truly capturing an intended moment in time of a two year old? It’s not easy. For more silly moments captured, be sure to check out the other entries at i heart faces this week.
